Opened my first bottle of Welches concentrate concord. Even though only a few months aging, I thought it turned out pretty good. This due to some of the good advice received from this forum. Next batch should be even better and aged longer.
I'd like to try a one gallon batch of Rose' (blush) as my next experiment. I would use one container of Welches Concord and two of their white (Niagra).
Top off and back sweeten with the Niagra.
Would like your thoughts on which yeast to use and any other suggestions would of course be valuable.

I use Red Star Cote des Blancs on all my fruit wines.

Why make only 1 gallon? I would make at least 3 gall min. Just alot of work for just a few bottles. Alot harder to fix as well on such a small batch.

I make one gallon batches to see how the wine turns out. Call it experimentation. If I can improve it, I may make another gallon with the improvements or go straight to the three gallon carboys.
