Just started a batch of Blueberry mead using raspberry honey. I am making approx. a 6 gallon batch.


12 lbs Raspberry honey
10.5 lbs Blueberries
3 Tsp. Yeast Energizer
2 grams Fermaid-K
Water to SG of 1.080 (Just under 6 gallons)
Trying Red Star Montrachet yeast with this batch (2 packages)


Will add 2 grams of Fermaid-K at 1.060 and 1.030 marks


Took a long time to squish all the blueberries but I'm sure it will be worth it.

Racked and stablized today. I also made my first f-pac and added that as well. This tastes really good!


The starting SG was 1.080 and it finished at 1.000.


I created an f-pac using 3lb fresh blueberries and 1.6lb raspberry honey. I simmered on the stove to reduce and then added.


This raised the SG to 1.010. It is just perfect for my tastes and I'm really looking forward for this one to get some age on it!


Oh why oh why doesn't George sell a wine aging machine?
 
The only worry i'd have is the posibility of pectin haze with cooking the blueberries. Even if they never came to a boil they can still create a haze. I always make an "f-pac" and then let it sit for a day with some pectin enzyme and a touch of sulfite. That way pectin is all bye-bye.
