Yea, of course.

I didn’t follow a recipe for this one, pretty much just chucked in some stuff out of the fruit bowl which looked a bit past it for eating. I also had a try at using a starter rather than just pitching a yeast. I did take a lot of notes though…..

- 1.2kg of rinsed and gently squeezed beech leaves.
- 1 medium/small grapefruit, zest and juice
- 1 small orange, zest and juice
- 1 small lemon, zest and juice
- 1 small very ripe (black and brown) banana sliced, skin on.
- 1.85kg white sugar dissolved in 2 ltr boiling water.
- additional 4 ltr boiling water
- 2 tsp pectolaze
- 1.5 tsp yeast nutrient
- 2 crushed campden
All stirred and covered.
SG measured at 1.084

Starter-
- 1/3 rd cup fresh orange juice
- 1/3 rd cup water
- 1/2 tsp yeast nutrient
- 2 tsp yeast.

Pitched starter after 24 hours.

Strained into clean bucket at around 72 hours. SG was 1.056 at this point.

I transferred into demijohns at day 7 as I needed the bucket but it was still very lively at this point (1.024) and blew through the airlock for a day or 2.
Probably best to leave it in the bucket until the gravity is down a bit more.

Be aware it stank of peroxide at 2 months and was still a bit fizzy at 3 months. I ignored it for a while longer and expected to sling it down the sink but at 5 months it smells and tastes very very pleasant.
