If one of the purposes of sanitizing is to kill bacteria, what about any bacteria on fruit I would put in the mix?
 
Wash your fruit first if whole. If the fruit is chunked or crushed already and you are just beginning it, then the k-meta added at the start will kill or at least supress the bacteria. Let the mix sit for 24 hours to kill the bacteria and most of the k-meta to get bound up so the yeast can work after that.
