Hey everybody,

When bulk aging a 1 gallon batch.... Do you add 1 camden every 3 months? or is there a more recommended addition?

Yes, and just like the larger batches I keep the racking to a minimum and leave it alone as soon as its clear so it can rest and concentrate on getting tasty. Although I admit most of my smaller batches are experiments and I tend to bottle them faster then the larger batches. I'll generally bottle them in 6-9 months, but have gone over a year, apparently cranberries, apple juice, honey & maple syrup can be stubborn!

I do a lot of 1 gal batches...mostly because I have a lot of 1 gal jugs...I tend to use only 1/2 a tablet at most. Im sensitive to sulfites so would hate to get a head ache from my own wine.

Have you ever tested to see what the sulphite levels are with that size additon?
