I guess I'm gonna have to try a "lesser" wine so that as you say keep my hand "out of the cookie jar".

Or, maybe, I'll just keep on going the way I am and to hell with the sulphites - if the great wine-makers were as impatient as me where would we be.

Besides, I'm never gonna get commercial quality in such a short period of time when they have had the advantage of time.
