I over fermented and now I have some super strong wine. Can I make some wine and stop the fermentation early then blend it with what I have?
 
You can not stop a fermentation in progress!!! You just need to start another batch with a lower starting sg to produce less abv. Sorbate nor sulfite will stop a fermentation, it just stops the yeast from reproducing and adding it early on to try and stop the fermentation can stress the yeast and cause off flavors and smells or the wine can stop too early and leave the wine too sweet. Please dont do it, its trouble!!!!
 
I agree with Wade.

Also, you didn't tell us anything about which wine, kit or fresh/frozen grapes.
