    Black Currant Wine

    I will soon be bottling some Black Currant Wine. I never made this before. What do you guys prefer - dry, semi sweet, or sweet ? I tasted it and like it dry but what I've read seems to talk about it being sweet. Thanks

    Wild Cherry?

    That is black cherry. Choke cherry looks similar but small bush like plants. Both make wine. Avoid smashing the pits, they are very bitter and I believe poisonious. I picked a couple of days ago and have a 3 gal batch in primary. Both make good jelly as well Good luck. denny

    Yes, I do the same thing, thinking I will use this to top off something. Most of the time I don't need that much so it accumulates. Sometimes its good and sometimes not so good. At least it didn't go down the drain without knowing. ! Good luck denny

    Permanent labels?

    I don;t know which label you are using but I have very good luck with Avery. I use 22826 (arched), 8163 (2x4) and 2160 (mailing). I use all of these in the winery and I recycle all my bottles. I have to scrape all of these off with a knife after soaking. denny

    I use that label sometimes. Just go to avery.com , set up an account. Then you can make your label using their on line design. It works well and I use their on line storage. The labels are costly and right now I am looking into some other way of doing it but still using their on line design...

    Winter is finally over!!

    I woke up this morning and it is 38 degrees ! The grass may be green but it isn't much fun to mow with your coat on. Come on sun ! denny

    Counter top help

    granite is also very heavy. I've seen older homes that flooring had to be beefed up. Also if you have more than one piece, they don't always match. I'm old fashion, I still like formica. Maybe consider a drop in piece like butcher block or something ? Good luck - anything will be very nice.

    Vintners Harvest Blackberry

    I started liking the blackberry but now I am into the elderberry. Ferment this out dry and it is very good ( 3 gal recipe) Let this age some, and it is good. I have some going now trying vh yeast r56, suppose to be more fruit flavor and body. denny

    I have made a lot of this, I like it. I started making the 5 gal batch but the 3 gal is much better. I think the price is right for what you get. Good luck

    Yes indeed ! My cook said it looked very good, more effort for us but well worth it. My sister makes a baked potato & garlic soup, maybe use leeks instead of garlic. denny

    JohnT, your soup looks really great ! We don't get that fancy, just boil potatoes and smash, add milk, of course some onion, celery, salt & pepper. Add the leeks to taste. I like bacon or bacon grease in my soup but did not have any this trip. No chives here yet but would not use anyway...

    Ah, my first taste of fresh leeks. Small, tender and a little bite. Put this in potato soup for supper along with home made bread. Will make some dip later. It doesn't get any better than this ! No wine tonight, ---- well maybe later.

    Wine bond specifics

    I am trying to sort this stuff out myself. It is complicated. I thought unpaid tax was for wine that you would export or ship, not sure. If you produce less than 150000 gal the tax is minimal and the bond amount is $1000. I thought it would be easier and cheaper to just write a check and...
