Dragon Blood: Triple Berry Skeeter Pee

I think I have decided that I like drinking this young only. I have just opened a bottle that I let age for 1 year and I don't like it. We love this at 60 days. We opened the bottle at Thanksgiving and there were many that poured it out in the sink. Same batch that we were adoring 9 months ago...

    Strawberry Wild Yeast

Sorry it has taken me so long to reply on here. Work has been killer! Things are starting to slow down and I can finally begin to work my way back into the wine room. I finally bottled the strawberry last night. I had a few friends over that tasted several of my wines and the strawberry ranks up...

"Muscadine Aging Gene" and other bedtime stories.

So this guy heard from for friends this weekend that I am oaking all my wines now, and decided to council me in what I am doing wrong. He brought me a bottle of liquid oak essence and told me to just squirt some in whatever carboy I wanted to oak. He explained how my oak cubes were a waste of...

    Redhots

I racked and back sweetened last night. I'm trying to decide how I want to bottle it. It has a great red color. It tastes like......red hots! It is wonderful if you like that warm cinnamon flavor. Good times! I will make this one again.

    Muscadine Debris in Carboy

Does anyone happen to know if once these crystals drop out of the wine, if they have any propensity of re-dissolving?

    Florida Cold Stabilization

Lol! My wine funds are cut off until after summer per the wife. I couldn't even get the all-in-one in time before the price increase. I am subjected to whatever I can buy with my allowance. I think old school is fun anyway. It makes you appreciate things once you don't have to do them anymore...

    Strawberry Wild Yeast

Head space? Are you crazy? They are all the way up to the neck, except the Dragon and really, who is gonna top off a Dragon's Blood? I can't share a picture without someone scolding me about head space! :) I am just not concerned about head space on anything I am not bulk aging in the carboy. I...

    Florida Cold Stabilization

I'm actually quite amazed by the directed air. It is reading 55 degrees, because I keep it 73 in my house. It has dropped quite a bit of crystals since I have done this, but i am now reading that it will drop crystals, but only what it will drop at 55 degrees. Then if I get it colder, it will...

    Florida Cold Stabilization

This is my solution to cold stabilization. We'll see if it works. My son called me a smart maniac. I shall report my results...

    Strawberry Wild Yeast

Last night was wine maintenance night and the strawberry had cleared to a deep dark color. I decided to rack it off it's bulk of lees. The strawberry flavor is evident and it is dry, yet smells very sweet. No yeast smell. After much research, I chose the American light toast oak and after...

    Growing in Florida

I was at Lowes today in Inverness, Florida which is about as Central Florida as it gets. I was looking for fig trees and came across a large variety of grape plants. Zinfandel, Cabernet Sauvignon, and many others. I was of the understanding that nothing would grow in our area except Muscadine...

    Strawberry Wild Yeast

Feral Dragon went from 1.075 to 1.01 in three days. I racked last night and it is gorgeous. Much lighter color then the strawberry by itself, but gorgeous. The strawberry is clearing and getting darker red every day.
