    Lemon Sunshine

Started my first batch of Lemon Sunshine last night. I am going by the recipe for the first batch before starting experimenting. I will have to use fresh yeast though, not a starter. One question: why the two day hold before putting the yeast in?

    Head Space

Looking for a way to reduce the head space in some batches I'm going to be periodically testing while I bulk age them. I know some folks have suggested marbles but I'm worried about just going to the dollar store and buying them there. Anyone have any links to food grade glass spheres (or...

    When to oak

newbie here - only on my second batch. Question - my first kit came with oak to put in the primary. Does the oak (chips, cubes, whatever) have to go in the primary or can you age on "finished" wine in bulk? I was thinking about taking a 6 gallon batch and age them on different oaks a...

    Sangiovese

I just racked Winexpert Sangiovese from the secondary fermentation to bulk aging. LOTS of sediment! I had to top it up with a full bottle of wine! Probably a good thing though, it tasted a little thin and still a touch bubbly. Nice and clear though. Overall though I'm pretty happy with it...

    Clarification/Degassing Question

I'm on my very first batch - Winexpert Sangiovese. It had been in secondary fermentation around 16 days. SG = 0.996, Temp = 71°F. I added the chemicals and the directions say stir for 4 minutes total. We stirred for 30 min plus and still saw some dissolved CO2. We only had a long...

    Wine Table

I plan to make my own wine table starting with kitchen cabinets. I'll have the wine cube storage on the left and then a couple of drawers and a door for storage. This will give me a nice large, flat surface to work on when making and bottling. I'm thinking about 2.5 feet deep by maybe 8...

    Filtration question

I have a Winexpert Sangiovese kit in the secondary fermentation stage. This is the first wine I've ever made. I don't have any filtration equipment (yet). Do I truly need to filter this into the bottles?

    Labeling and "Winery" Name

As we were bringing our first kit home my wife was already designing the label in her head. We bought our kit as a present to each other for our eighth wedding anniversary. It's a Sangiovese so we're calling it Anniversario Sangiovese. She's going to take two wedding rings together to look...

    New from Kentucky

Hi all. I've been drinking wine for about 15 years and have always thought about making my own. This year we took the plunge and my wife and I bought a wine making kit for each other for our anniversary. We have our first batch in the secondary fermentation stage now - a Sangiovese...
