    Mosti Mondiale bubbly Amarone

    HI, i made a Rennaisance Amarone kit about 6 months ago. The wine was strong months after but now I tried it and it softened dramatically and it has bubbles around the edges of the glass that won't seem to go away. What is wrong with it?

    SG too high?

    I read a couple of posts where people say that there starting SG is too high so they had to dillute it. Do they not want the high alcohol conntent or does it screw up the finished wine? Is there a specificSg range that u want to be in?

    apple wine racking ?

    I am making an apple wine and the recipe says to wait 30 days before the first racking? I took an S.G. reading on day 20 and it was .996. Do I have to wait that long? What is the general rule when making wines from juice and fresh grapes? Should I degass like i do with the kits?

    Mosti Mondiale oak ?

    I am making the renaissance Amarone and the kit says to add the oak at secondary fermentation. Then it says to leave the oak in for a week, stirring daily. Am I supposed to take the oak out before the fermentation is done? If so, how do i do this?

    I am currently making 3 gallons of wine from 100% pure apple juice. The recipe calls for 1/4 tsp. of tannin per gallon. I dont have any of this and was wondering if I really needed it and can i replace it with anything else?

    fresh grapes vs. wine kit?

    What is the difference between making wine with fresh grapes and a wine kit, other than the crushing and pressing of the grapes?

    K- meta?

    I just started my first kit and when i went to remove the lid with the airlock in place, it created backpressure and sucked in the K- meta out of the airlock. Is this ok or is the wine contaminated?

    Mosti Mondiale My first wine kit

    I just ordered the beginners kit with the Renaissance Amarone kit. This will be my first time. I was wondering if the beginners kit was all i needed to make this wine successfully. Does anyone have any tips or suggestions to help me through the process? I'm very excited.
