Fast clearing blackberry

Did I get lucky here? I have a three week old 2 gal. blackberry made from 1 gallon of juice from my steamer. It was about 8 pounds of fruit. I added pectic enzyme, pot meta, and enough sugar to have a pre ferment 1.09 and 2 gallons. Primary was done in about 4 days at 1.01, and after 2 weeks it...

    Steam-Juicing Elderberries?

I have a couple of questions to tag on to this discussion. I have an elderberry started from steamed juice about 2 months ago. Yeast was pitched 11 May, racked to secondary 18 May, and again on 1 June. Everything seems fine. The color is pretty much the same as was the must when I started out...

    Steam Juicer yields

So there I was. Me, my recently purchased granite ware steamer, and 8 pounds of frozen Illinois elderberries. How hard could it be? My 5 year old was sitting on the kitchen island looking on in pure admiration. All was going fine, then, time to draw off some juice. My plan was to go...

    Home made Sparkling wine tonight

Tonight the fruits of my labor was were consumed. 26 years in the USAF. We had my retirement party tonight. I had made a VR chardonnay kit that I transformed to sparkling wine for the festivity. It has been a year plus in the bottle. I've had mixed results. The first blew the top like a blasting...

    How to rack without ...

My experience has shown that the best racking method is to siphon down to about 1/2 or so then tilt the carboy on a folded dish towel or something. I will set my auto siphon so the weight of the hose holds it about half way down the carboy. Whenthe winegets there, it is time to hold it about 1-2...

    Crabapple Wine

I just sweetened and bottled my Crabapple/apple yesterday. I had used crabs from my boss's house. They were aromatic and larger than normal crabapples. I sweetened with wine conditioner, filtered and bottled. The leftover was very tart. I could taste some of the normal young wine flavor that I...

    WineXpert Chardonnay to Champagne

Hi folks. It's finished. Actually about three weeks ago. I'm sorry wasn't able to photograph the degorging. I have a camera that needs a specialized and expensive battery. The degorging went smooth. I took 4 bottles at a time and stuffed them top down into my freezer. I didn't need any support...

    Corks

Just an observation, but I had the same problem the first time I tried to cork a bottle. I decided to practice first on an empty bottle. The mistake I made, was that I was trying to insert the cork into the bottom of my hand corker, instead of into the port on the side. I broke two corks, trying...

    Worm wine?

I was doing research for a class assignment today and stumbled on this article when I did a database search for "Home Winemaking". I'm not easily grossed out, but this.............. Someone tell me that the Duluth News Tribune is a prank paper. Or this is a Urban legend. <TABLE...

    How Cold

I figure if I keep it in the cool area, it won't be as volitile as a jar the daily. Thanks for your time and thoughts on it. I drank some the other night. It was leftover, that I put intoa grolsch. It was drier than I expected. But very nice. It had the sediment in it that clouded it when I...

    How Cold

Q: What do you get when you put 100 lawyers in a basement? A: A whine cellar. I'm sorry for the Copy/Pasted joke, I'm just sitting here waiting for the ice will build up enough to knock my power out >>>again.

    Clef du Vin

Shulte, I'm sorry if I came across as a wiseguy. This forum is asked about Aging Gadgets frequently. The thing is, there is nothing out there proven to add years age to wines. I'm no chemist or biologist, but my opinion is you have to let the elements in your wines attract, dettract, and settle...

    Clef du Vin

That must be aproven marketing strategy. The more you charge, the more believable the claim. I think a better strategy would be to go out and spend 3 bills on 4 or 5 kits, making them one after another. You will wind up with so much wine, you can't help but age most of it before consumption.

    WineXpert Chardonnay to Champagne

My garage is St. Louis cool. It probably averages low 40s lately. The weather folks are calling for more freezing rain tommorow. We were out of power for 4 days in December. I am wondering if putting off buying a generator was a good call now. I'll keep my fingers crossed, and the chainsaw ready.
