I am currently aging the En Primeur Amarone I started the beginning of this month. I was thrilled to see the kit came with raisins, as well as a grape pack. Looking forward to the turn out on this bad boy.
My batch is now about 15 months old, and starting to come together on the taste and bouquet. Finish isnt as long as I had hoped and mouthfeel is so-so but who knows what another 12 months will do.
Up to your taste. Start with one and sample wine after a few weeks. I have been happy oaking my wine with one or 2 spirals during bulk aging for 6-8 months.
My white chocolate port is clearing as we speak.. with F pack added as normal during the clearing phase.. interesting how you guys are instructed to wait on the coffee style.
No added sugar pack either. Just an f pack to add in the final stages. I would like to add my must came in at a whopping 1.122.. can we say 17%. Smells great.
Dispite it producing half the normal amount of kit wine, it comes with double ingredients. So if I happen to make two kits at once for 6 gallons I should be using 4 packets of yeast?!?!?
