    WineXpert Mezza Luna Red sour?

    I just opened a bottle of Mezza Luna Red. I bottled it in early September. It tasted very tart, almost sour. Is it still too young? Hoping it will get better with age. What do you guys think?

    I started this mead in September. I back-sweetened it with Honey and sugar a couple weeks ago and intend on bulk aging it for several months. I got into it today to add some clarifiers and of course couldn't help but take a taste... Mistake ;o( This is my first mead so I really don't know...

    WineXpert F-pack in primary

    That was my intention. I also added 4 cups of sugar, it only brought up the SG to 1066. BTY - how do you figure potential alcohol?

    I just started an Island Mist Green Apple Riesling kit, I followed someones advice and added half the F-pack to the primary. Do I need to refrigerate the other half now that it has been opened? Thanks ;o)

    Yep, I use recycled bottles too. Just so you know... Don't use any screw top bottles. The glass is too thin and won't stand the pressure of a cork.

    Degassing ??

    Ive played with a hand held vacuum pump, the kind for pulling the air out of open wine bottles. It made the sides of my BB carboy begin to collapse from the vacuum, and I didn't get any bubbles. Should the vacuums be used only on glass carboys?

    Did you use any clarifying agents? Or do you let it happen naturally? I was gonna add SuperKlear at the same time, think that's ok?

    Thanks for all your help guys ;o) I degassed and added sorbate last weekend, now this weekend I would like to back sweeten it with honey, does anyone have any tips? How much should I use? Should I put it straight in and stir like crazy or melt it down with a bit of warm water? Thanks...
