I do have the Whisperkool unit which keeps my cellar at 58-60 degrees, but does not do anything for humidity. Looks like buying a small humidifier might do the trick, thanks for the input everyone!

My cellar right now is at 50% humidity. I installed a small wall fountain but it hasn't done much. Anyone have any tips, thanks.

Has anyone ever ran out of wine to top off their barrel with? If so would it be ok to top off with a store bought wine?

I finally noticed after 1 week that MLF has kicked in. I put my ear against the stainless tanks and it sounds like small popping noises. I check with the test strips and its half way there. Hopefully another week it will finish, add my sulfites and then rack into my barrel!

I did everything right and now my red wine is in stainless vats. I added freeze dried cultures on Monday night. Was just curious how long before MLF kicks in and if I will be able to hear it? Thanks in advance, Anthony
