Entering my third year of grape growing. Yesterday I pruned my Cab Sauv vines to form first year cordons or fruiting canes. Does that look right?

The vine on the right is better than the other two shown. It will have both cordons about the same size. You can use a single cordon on the other two and let a second one form on each. They will eventually balance out. Another option would be to cut both the other two just below the wire and form both cordons this year on each of them. I would opt for the way you have it myself but others want total symmetry.

If you choose to leave grapes this year, go lightly as those vines won't support many without it stunting their future.

Would 8 clusters per arm be too heavy for them?

Six to eight per side should be alright. If the shoots slow down growing too much, drop a few of them so the vine doesn't get stressed too much.
