    Double dragon blood batch in brute

    I'm about to start my first double batch of dragon blood in a 20 gallon brute garbage can. I have a lid for it but I am almost certain it isn't an airtight seal. Can I ferment to dry without a functioning lid and airlock? Should I rack about the time I remove the fruit 1.000?
