I'm about to start my first double batch of dragon blood in a 20 gallon brute garbage can. I have a lid for it but I am almost certain it isn't an airtight seal.

Can I ferment to dry without a functioning lid and airlock? Should I rack about the time I remove the fruit 1.000?
 
You just might get away with it but I'd play it safe and as you noted rack to your two carboys when you remove the fruit @ SG 1.000. Finish to dry in the airlocked carboys and proceed from there. You could when dry rack both back into the cleaned and sanitized Brute for stabilization, adding the sugar and adding clearing agents - one right after the other - and then back into two cleaned and sanitized carboys.
 
Thanks. That's kinda what I figured. That is a good idea to rack back into the bucket for stabilizing and sweetening. That way both batches will be identical
