    I literally dumped my water/sugar combo right onto the lees and remaining oak from a RJS Tenat Merlot kit.     When to MLF

    I have read some people wait til fermentation is over and others start it at the end of fermentation. All my wines are 4 days into fermentation and between 1.02-1.00 at the moment, would you start your MLF now or wait a couple days?

    Mistake sort of works out

    So my local home brew shop is advertising they will be getting Chile Fresco, Fresh Grape Juice from the San Fernando Region of Chile. Have any you ever heard of this? What do you think the quality will be? It's a $115 for a 6 gallon bucket, would I be better off with a $135 cellar craft...
