oak chip recomendations

Hello, I have 6 varieties of California juice I just recieved and I enjoy oaked wine with the right varietal. My questions are, do you prefer american or french oak? Would you oak the following wines, and if so how much.

Chardonnay
Chennin Blanc
Viogner
Red Zin
Cab Sav
Petit Syrah
