Tried my Yakima Valley Pinot Gris last night. I am not a white wine drinker but this was so good that I may be persuaded to drink more now. It has excellent flavor at only 4 months aging and should only get better.
 
I've got that one now sitting in a carboy. How long did you age it for before bottling, if at all. Mine was started 1/3/09
 
I didn't age mine in a carboy. I racked it to a new carboy 8 days after adding sorbate and clarifier and left it for 5 weeks to continue clearing. at this piont it was very clear but had a little sediment on the bottom, so I racked it again land let it set for another week. At that point there was no more sediment so I bottled it up. That was 2 months ago. I figure the age from the date that it finishes fermentation so mine is 4 months old from that point. Ron
