Yesterday we were helping out a friend get caught up with her bottling. She had 7 WE / RJS specialty kits that had been bulk aging for about 6 months. They had everything added as per kit instructions but nothing for the 6 months.
We used a vac pump for both racking and the bottling. We bottled 4 reds after adding 1/4 tsp Kmeta. She had 3 whites that had some fine sediment on the sides of the carboy so for those we just racked, added 1/4 tsp and then topped the up again.
We plan on going back in 2 weeks for bottling to give them a chance to settle out. At that time we will vac rack again and use the vac for bottling.
Question (finally): Will the 1/4 tsp be enough protection or will I have to add another 1/8 or 1/4? These wines will probably sit for 6-12 months.
