I'm on the 4th stage of My WE Cab. Merlot blend. Up until now, the timeline has been determined mainly by my SG. Now that its not fermenting anymore, the directions say 8 days after adding the chitosan, to rack to a clean carboy....


Is this fairly accurate, or is more time better, and if so, how much more....


I plan on bulk aging this for at least 6 months...

I would wait about 2 weeks and tilt the carboy to 1 side. This will let the sediment compact and be on one side so that when you are ready to rack off them you can gently tilt back the other way and rack off the other side where there is little sediment to transfer over to the clean carboy. You will get more wine and cleaner wine this way.
 
Just to add to Wade,
After racking, bulk age at least 2-3 months then transfer one more time and continue to age.
