When can I backsweet??
I have a batch of hard ice tea that's one fermenting, can I just backsweet it now, rack and clear it?

You can sweeten after it is stabilized (K-meta AND K-sorbate). Personally, I would rack off sediment, stabilize, degas, (optional wait), sweeten, and clear.

Once fermentation is complete and you have stabilized your wine. Typically when fermentation is done you will add the k-meta and sorbate in. Wait about a week and backsweeten. That gives the k-meta and sorbate time to do its thing. You may also want to degass during this time period.
 
thx! that's pretty much what I wanted to do, exept I was gonna sweetened just BEFORE degasing, so I would kill to bird with one stone (degas & mix in the lemonade at the same time) does that make sense?
