All this chatter about waiting and aging is very interesting but when you are almost 81 years of age you don't dare wait 2 years for wine to age!!! Something like buying green bananas

Madman, I am a year new to this hobby and most of my wine are bottle aging at the moment.


But my WE Australian Shiraz had a 1 yr birthday this month and it is GOOD!


WE Mezza Luna Red is 13 months old and it turned out nice.


CR Port is 9 months old and it is on the way to being awesome.


Have made 2 Island Mist kits and didn't care for either one.


The other 9 kits I have made are getting happy getting older.
