I don't know if many of you are aware of chocolate covered cherry day on January 3rd. But as a joke 2 years ago I decided to make something to celebrate the day. Yes this did involve more experimenting on my part and on Monday it has finally been bottled after only 2 years of aging.

I plan on letting it age at least another year but the sample glass was outstanding and that was using clover honey. Next time it'll get a better honey and a bit of time aging on some cocoa nibs - because I can never leave well enough alone!

Don't know why I can no longer use the image uploader. It shows the following:

Response object</font> error 'ASP 0251 : 80004005'</font>

Response Buffer Limit Exceeded</font>

/RTE_file_browser.asp</font>, line 0</font>

Execution of the ASP page caused the Response Buffer to exceed its configured limit.

So hopefully you all can see the pic at this link: http://caseycellars.blogspot.com/2011/01/sweet-chocolate-cherry-mead.html
