Batch of Selection Estate Chardonnay (Sonoma Dry Creek ~unwooded)



Started this batch around noon and it's already starting to ferment. Cool stuff!



Notes:



  1. Fruity smell /taste (almost smells like apple juice?)

  2. Dark color - I expect that it will lighten up before bottling.
  3. SG - 1.080 | Temp - 75 deg.

Did it not come with oak Jack or did you just decide not to add it ?
 
That is the unwooded part...sorry but I had to do it!

A fresh, well-balanced wine with typical Chardonnay characteristics of tropical and citrus aromas and flavours. The fruit quality of these grapes is allowed to shine through, and the rich, round mouthful lingers to a long, crisp finish without the influence of oak.
