Do you age a sparkling wine the same as a regular wine? Does it ever
get sorbated? Same amounts of k-meta? Will be starting one in two weeks
and just thought I should actually know these answers instead of
guessing.

We never Sorbate, all the instructions say not to.

Also, hold back on the K-Meta near the end.

As for aging...after it is dégorged it needs some time to regain the bubbles.....We have had some that's over a year old and it was very crisp and bubbly.Usually we can't keep up on having it around, but now we have parts of two batches on the shelves.

Sometimes we just Dégorge one bottle at a time, like the last batch we made could have been dégorged in Oct., but we just do a few bottles at a time...We use part of one bottle to top off the others and then 'dispose' of the leftovers, usually it doesn't take much to top off the other bottles...it is all good.
