Hey all thought I'd let you all know how this kit is coming along since it's a new one.
I just racked my limited edition tempranillo/cab into a carboy for bulk aging. It looks like this kit will make a great wine. It has more tempranillo character than cab character. It seems to have good structure at this point. Maybe a bit less tannic than I'd expect, though my partner disagrees and thinks any more tannin would be overkill.
Looking forward to trying it again in a few months.
