My Pear wine has slowed down bubbling some, I have about 2 inches of krud resting on the bottom of the 5 gallon carboy. When and how ofter do I rack and what tells me when to rack?
I have about a hundred other questions comming later

Bud, I'd let the action in the airlock stop before I worried about racking. Once it does rack to a clean and sanitized carboy....try to leave the krud behind but don't fret if you get a bit of it into the next carboy. It'll come out in clearing.
 
for fresh fruits its different. @ 1.020 I remove the pulp. @ 1.010 I rack then let it go dry.
