Don't we "kill" the yeast when you add potasium sorbate?

Not quite. The potassium sorbate prevents the existing yeast from reproducing, but it does not kill them.

Generally, you let them die of starvation with a dry wine. If you want to backsweeten, you add the sorbate so that they cannot reproduce and kick off a new fermentation.
 
i added strawberries

i added strawberries when i removed them and racked to carboy wow this wine now looks like carrot juice, Moscato. gonna take some time to clear.
 
My strawberry moscato cleared very quickly. don't forget to add Pectic Enzyme when the fermentation is finished. My Pinot G is taking longer than any of the others, but it is finally getting clear now too.
