How long without sulfites?

My Merlot just don't want to get started with MLF.

I'm curious how long can it go without sulfites before I need to be concerned? One month, six months, a year?

Of course I'm keeping it topped up and I'm very careful with proper sanitation.

I use
Lalvin 31 and VP41 each goot for up to 66gal
Not have had any problems.
You may be thinking that you will SEE fermentation once added. You will not see anything like what the wine yeast does.

Yes, just did about an hour ago.

If it still wont start, I want to drop it in the freezer CS for a month but not sure if I can CS for a month then put it through MLF for another month. That will be roughly 3 months without sulfites.

If thats too long, I may choose to skip MLF on this one.

That MLB says it is good down to 3.2 so it should work. Did you pick up any malo nutrient as well?

I bought the 80g pack myself so still have about 30g left.

Not sure how long it will keep but it may last awhile if you store it in the freezer.
