Ok a few weeks back I posted that I picked up three buckets of NeroDavola that I was going to batch together. After pouring every thing into the fermenter, checking SG, pitching yeast etc. I began to clean up and took the empty buckets out side to hose them off when I realized one of the buckets said (small print of course) this bucket contains Dolcetta. I never bothered to check them all I was so excited to get them going. The pails had been wrapped in black garbage bags when I brought them in the day before to keep things neat. So now that they were up to room temp I just unwrapped one at time and did my usual thing. I originally intended to make the Nero without any tweaks but since it was already though unintentionally going to be a blend I decided to do the raisins and tannin ala Joeswine. So I've never tried Dolcetta do you think it'll turnout?? :d
