Thanks again for all the advice, apologies for not replying sooner, I've been away.


I decided to splash rack and put back in carboy to age, bulked with similar wine. Flavour has developed somewhat in past few weeks which is promising. My ultimate plan is to use with this years must in 4:1 ratio as suggested.
