Have started a batch of guava. I will hopefully be blending it with some of the pineapple that was just finished.
I stopped by the fruit stand on my way to work and picked up 2 boxes of guava. Washed them. Cut the ends off. Removed the little sticker. Put them in the steam juicer and let em rip. Ended up with two gallons of juice at 7.9 brix

Juiced another box this morning so I now have 3 gal of juice. Added sugar to 1.090, pectic, 3 campden, and nutrient. Will pitch yeast in the morning.

This juice is thick like gravy.

Bentonite Addition

This stuff is thick. Not as thick as honey, but thick. Like a milk shake. Some one had mention they had trouble getting it to clear. It has been fermenting now for 3 days and is in the 1.070 range. I have been thinking of adding bentonite now. Or should I wait and see if it clears on its own. Any thoughts..
