Fruit / Juice question

Anyone know if there is any variationusing the fruit juice extracted from steaming as compared to the amount of fresh fruit called for in the recipees?


In other words, if a recipee calls for 30 pounds of fruit and the same 30 pounds of fruit steamed resulted in 9 quarts of juice, would the 9 quarts of juicebe considered the correct amount?

I steam all my juices too...sometimes I add a few extra pounds per batch if the fruit doesn't seem too juicy and because we are not getting the benefits of the pulp in the must....It would be up to you and the amount of fruit you have on hand.
