A couple weeks ago I stopped in my LHBS and they were having a sale going on. I walked out with a World Vineyard French Cabernet Sauvignon kit. I am getting ready to start this (in the next week or so) and opened it up to look it over. The kit came with Red Star Premier Cuvee yeast. I know this is a common kit yeast as it is a powerhouse and fairly foolproof for beginners but I don't feel this is the best yeast for this kit. I am thinking on changing to either Red Star Pasteur Red yeast or Lalvin RC212. Any thoughts on this?

Also the kit came with no bentonite. Is this normal for this particular kit?

Re the bentonite...I would email Winexpert customer support. I thought all WE kits came with bentonite.

I sent an email to Winexpert about the bentonite but have not heard back yet.

Got a response and was supposed to get bentonite so I picked up some this week. They offered to send some but that was not necessary, I did appreciate the offer.

I will be starting this in the next couple days and will be using the Pasteur Red yeast.
