I have been making my own fruit wine for about a year now and have always adjusted the acid levels by taste. I would like to be a wee bit more accurate than that with my next batches. Without investing a forture in a chemistry lab or enrolling in a Chemistry class, what is available for a quick acid test? What shouldthe proper amount of acid in wine be?

George sells several test kits for measuring titratable acid (TA) and pH.
Check his Online Catalog under Equipment&gt;Testing.
