Frozen Juice from Midwest, Started 3/10, started MLF 4/9, Re-racked 6/10, Sg .990 PH 4.01.

Calculating my So2, the chart stopped at 4.00, I added 3 grams. Will check for free SO2 before bottling in a couple of months.

Now the questions: with that high a PH should I add Sorbate? If not why do they always include it in the package? bk
