    Back sweetening

Hi Toadie Thanks. Yeah it is / will be still wine in 1 gallon demijons or bottled. I only do small batches I like the idea of the Ribena. Never considered that.

    Back sweetening

Reading quite a few posts here about back sweetening. They almost all say sugar or sugar syrup. Does anybody use non sugar sweetener tabs? Could you just click a tab in to bottles before sealing them or after opening? If you pop a sweetener in a bottle before sealing it, could it cause it to...

    Just checking.

Your right. I was thinking that would take the cost way up and there's Def not enough room in the freezers lol. I'll maybe try it with one next time and see how that turns out. I'm not expecting miracles with this one just hoping for something pleasant.

    Just checking.

Hi Bernard I have realised my mistake by not checking the SG before measuring and adding the sugar. I was just using a recipe I had read somewhere online that asked for 4 ltrs juice add the rest of the ingredients and top up with water. I like the freezing idea but its a little confusing. If...

    Just checking.

Hi Ricky. Thanks for the welcome, I'm in Scotland. The kit wines were just something to do during the lockdown here and this one was just a try it and see what happens type thing. A learning exercise for me. I was hoping for something around the 13% mark. If it was a bit lower, fine, a wee...

    Just checking.

Hi all. I've just made two kit wines for the first time in over 25yrs and all seems to be going to plan. Going so well that I thought I'd try something different, for me. I had three ltr of pure red grape juice and one ltr of pure apple juice and an empty demijon. After cleaning everything, I...

    Still fermenting?

I started two Beaverdale kits, one a Sauv Blanc on the 2nd Feb and a Chateaux Du Roix on the 3d. The SB stopped bubbling Friday 19th the CDR stopped on the Mon 22nd. I racked the SB on Tues 23d and added the stabiliser. I racked the CDR on Thurs 25th and added the stabiliser. As per the...

    Totally different fermentations

Yes, that's exactly what I was asking. I had an idea it would knock it out of balance. Beaverdale.. it wasn't the most expensive kit they had but it was far from the cheapest. Here's hoping that it stands up to their sales pitch. I'll post an update when I get around to trying it out.🍷

    Totally different fermentations

Excellent idea... Unfortunately this was after I'd cleaned the first one off slightly. That was even more spectacular, volcanic eruption sprung to mind. A quick blast through from the tap cleaned it up thankfully. Just a thought.. If I half fill the Demijon with water to start it off will it be...

    Totally different fermentations

Thank you. It's been such a long time since I last made wine I've forgotten most of it. I had a look last night at some old books I used years ago and one recommended half filling the demijon and when the fermentation settled down topping up to the correct amount. Might have bee a better idea...

    Totally different fermentations

I'll take the airlock off the red wine and put a loose cover over it The lockdown has affected us all in so may different ways. Make sure to head further North next time. Dornoch is only about 40ish miles from Inverness and plenty distillery's to visit. Orkney is something else. So many places...

    Totally different fermentations

Thank you. Yeah, taking a reading will be a part of setting up from now on. It makes sense to know what the alcohol content will be. Dornoch is beautiful. I've been visiting for over fifty years now. The beach, the local people and so may places to see. You can even go to the Orkney isles for...

    Totally different fermentations

Thanks. Yeah different yeasts, that makes sense. I've read on here that starting in a bucket is quite common. It's not something I'd heard of. I've always started the kits this way. I only ever used a bucket when starting from fruit. I'll maybe think about starting a red in a bucket next time as...

    Totally different fermentations

AHH ok. I thought I had to keep the oxygen levels down hence the airlocks. I have a hydrometer but in my haste to get started I forgot to check it. I'll check it when the bubbling stops. I'll also rerack and clean it all up. I live in Glasgow. We have a caravan in Dornoch in the Highlands. We...

    Totally different fermentations

Hi All. I'm very new to the forum and just started trying some kit wines after about some 25yrs. I bought two beaverdale kits here in Scotland, one white and one red. My wife doesnt drink red and I don't drink white, keeps it simple. I wasn't expecting such a difference in the two fermentations...
