How many times can I use Yeast Nutrient?

Today is day 7 of Malbec fermentation. Because of slow fermentation, I added yeast yeast nutrient 3 days ago. Still sugar present (potential alcohol of 3.5%). I am using a hydrometer. Should I add more yeast nutrient?

Chilean Cab 2016 - MF Question

Purchased 20 cases of Chilean Cabernet. Yield was a little over 25 gallons. Pressed a few days ago. Added ML yeast. The wine is stored in 100 liter variable capacity SS tanks. A winemaker friend of mine advised to stir the product at least once. After 2 weeks commence 1st racking. Is it safe to...

    Oak Chips or Oak Powder

I will go with the larger size oak pieces rather than oak powder. What about sanitizing the oak chips? Do I need to soak in a solution of K-Meta?

    Oak Chips or Oak Powder

I made Chilean Syrah back in May. I just completed another racking (MLF Complete), It's being stored in SS tanks. However I would like to incorporate an oak flavor to the wine. Two methods are oak chips in a Muslin bag and drop into the wine or measured amounts of Oak powder. Your thoughts...

    Airlock on SS Tanks

It's just wine displacement. VC SS Tanks are great. Less work compared to wine barrels though I do miss the oak flavor in my brew.

    Airlock on SS Tanks

I just performed a second racking (Chilean Syrah) with Malolactic Fernentstion complete. I added K-Meta. Once I inflated the bladder wine overflowed into the airlock port. I am assuming this is due to the K-Meta gases escaping. As an aside my Chilean Syrah is outstanding! Your input...

    How to Cool Basement

There are 2 windows that takes in the East sun. I will cover them completely. I am hoping this will lower the temperature by a couple of degrees. I also lowered the thermometer to the level of my wine tanks to obtain a more accurate reading. Thanks everyone!

    How to Cool Basement

I am looking to cool my basement down to about 60°. The current temperature right now is approximately 68° and I think that that is probably as high as it will get during the summer. I have several batches of wine that are undergoing the aging process. I am very concerned that if I don't...

    Chilean Syrah Winemaking Report

My professional wine chemist said that MLF will be fine due to the low quantity of K-Meta.

    Chilean Syrah Winemaking Report

Pressed last week. The free run was excellent. Beautiful color. Great taste for a first sample. Placed K-Meta. Now the process of malolactic fermentation will begin. First racking will take place this Tuesday about 10 days post press. Overall the process has been outstanding. Will keep...

    Chilean Syrah Winemaking Report

Spring 2015 Chilean Syrah Winemaking Report Purchased my imported Chilean Grapes on May 14 (20 cases with a potential yield between 25-30 gallons). I was impressed at the quality of the grapes. They were beautifully packed in 18lb plastic crates. It appears as if the Chileans are very...

    Crusher/Destemmer Equipment Advice

It goes for $605. Having a destemmer takes out so much of the manual labor of separating the grapes from the stem. I am pretty much all set with all of my equipment! I should be receiving my Chilean Grapes by May 15! Chilean Syrah here we come!

    Crusher/Destemmer Equipment Advice

I've already placed an order for a 45 Press and an all stainless steel crusher/destemmer (manual). Down the toad If I get tired of hand cranking, I'll simply add an electric motor and belt. I am stoked about my order of Chilean Syrah grapes scheduled to arrive 2nd week of May!

    Crusher/Destemmer Equipment Advice

With regard the wine basket press, those were my thoughts. You can always downsize planned wine production but not the other way. Looks like I am going with a 45 or 50 size press. As far as the decrusher/destemmer, I am leaning towards purchasing an all SS manual and if need be I can always...

    Crusher/Destemmer Equipment Advice

My production run is anywhere between 25 gallons and 75 gallons. I thinking the 45 press would be ideal since it can accommodate a volume of 25 gallons of post free run must.

    Crusher/Destemmer Equipment Advice

Excellent job! I notice you have a press in the background. Is that a No. 30? I am also looking to purchase a wine basket press. Based on an annual production run of no more than 75 gallons, I am thinking a 45 wine basket press will suffice. I found someone who was selling an almost new No...
