I have made this three times now and the only success I have had is using amylase enzyme, it has cleared up really nice. I did not add until got done with the wax forming issue. Good luck!

I do my own sausage also, I have 30# vertical stuffer from cabela's if you want BIG, if small take a look at the Dakota Water Stuffer, it works well just to small for my process. I do have one so I know they work.
Get yourself an "all in one" and never look back. You can transfer-degass-bottle-filter all with the same unit. The cost is a great investment. Search around and read about it and you will find it is a GREAT product
