I have used before and it came without anything added just refrigerated. Anyways i sent email out asking about this situation to the distributor. So if it was wild, i shall just keep from this point forward or should i add sugar before i get my yeast in place?

I just got a bucket from pardo and it was active fermenting My sg read was 1.05 I immediately put kmeta but would appreciate feedback as if this a lost cause or if i can save it somehow. Thanks Luis

Here it goes 36hrs chromatography, it seems to have gone almost to the top. Now, regarding Malic acid, I noticed it is very vague now, see picture. But being first time on this, I dont know if this is good now or if I need to take further action. Appreciate the feedback. luis

Thanks. I have added no SO2, tasting every two weeks to ensure no odd odor/flavors and using inert gas to protect head space. I just measure again, to me it looks better but need some feedback as if this is enough or shall I give two more weeks...or re-pitch again... Another question, why I...

Im still unclear about my chromatography results and appreciate guidance. I did re-pitch on 6/29 and added opti-malo. Please see attached my chromatography results history. It seems consistent all along on the Malic. The 0716 results have turned bluish over time but were similar to the other two.

Been doing kits for three years and the hardest part is waiting the aging period. I age in bottle and can confirm that taste improves significantly after one year mark. Some i left for two years got even better. My preference are selection with skins like tempranillo or my favorite super tuscan...

I used to do kits, now on my first fresh juice bucket. After reading about prevention of having a good later malo and softening on taste i decided to try it out. Im just barely through my second weeks on it so still long way to go. If i dont like taste afterward then at least i tried.
