Two days ago I made a gallon batch of rhubarb wine. I opened up the primary to add the yeast(waited more than 24hr to do so) and there was mold on the fruit. Can I scrap the mold off and add the yeast or should I start over?

A week ago I added potassium sorbate and sweetened with simple syrup. I have now decided to sweeten a little more. Can I just add another batch of simple syrup or do I need to add more potassium sorbate?
