    Update #2: put on a small room fan aimed at the primary a few hours ago and the temperature dropped to around 73. Cracking a window in this weather in NY is a bad idea. Might lower the fermenter temp, but it is makes ME cold haha. All's well for now, thanks again for the advice, everyone.

    Ah I see. So it seems bulk aging, besides perhaps improving your wine, also provides an "insurance" against all of your wine being consumed before aging has occurred. Clever :h

    Thanks DoctorCAD, I do plan to bulk age most of what I make this first time and not touch it for at least six months, maybe longer after bottling. But I think I will have to try at least one bottle right after to prove to myself that I made wine! :dg
