    JAO question

Thanks for the advice. I used my drill mixer last night and it is thoroughly mixed now. Fermentation is vigorous. Now I just have to wait. I entered a bottle that I had bottled in December in this years Kentucky Wine and Vine Festival and it will be judged tomorrow night. I'll let everyone know...

    JAO question

Help, I started a new batch of JAO mead last night, got home tonight to check and it looks like all of the honey has settled out to the bottom. This is a 6 gallon batch I am working on and I have filled the carboy about 7/8th full. Can I stir the honey in? Any suggestions? I probably got in...

    Clarifying Mead

I have a 6 gallon batch of mead that I started several months back. It has stopped fermenting and the oranges have fallen to the bottom and it is still not clear. I racked it 2 days ago and want to bottle soon. What is recommended to clarify my mead so I may proceed. Also, would you recommend I...

    JAO lost recipe

Well I racked my JAO yesterday after starting in early May and it is AWESOME! Only problem is that I have lost the recipe. Made one gallon to try it and I am ready to start a large batch for Christmas presents. Could someone please post the recipe for a poor ADD wine and mead maker? Maybe it is...

    My First Ancient Orange

I just racked my JAO yesterday. After sitting in my wine room since first part of May. It is crystal clear! Picked up some lees at racking and will let settle out before bottling. I tried a bit and it is KICK ASS! used Red Star yeast and left it totally alone. Don't know the alcohol content but...

    So how bad is this?

I too am a member of the grommet in the first batch club. I put some sterile gauze in the grommet hole and my Pinot Noir turned out fine.

    Topping off with marbles

I bought them at Hobby Lobby. They had them marked 50% off so they cost me only $1.00 for a 2 lb bag. I soaked them in a strong santiizer solution then rinsed them befor putting them in the carboy.

Time in a bottle makes a big difference.

I rushed my first batch of WE Pinot noir to bottle in time for Christmas presents and opened our first bottle last weekend and was very happy with the initial tasting. We had company over and they couldn't beleive that I had made the wine. I have 12 bottles left and I am going to be patient and...

    Topping off with marbles

OK so I decided to be cheap and top off my Super-Tuscan with marbles rather than a sub-standard wine. I did this at clarification time and it took 20 POUNDS of marbles! I now have the dilemma of racking off of this mess. Do you think that I can drill down with my siphon to the bottom of the...

    WineXpert Bulk aging/racking question

Yes. it is in the carboy for secondary fermentation, how often should I check the SG? like I said, it hasn't moved at all in four days but my wine area is around 66 degrees right now, could that be hindering the fermentation?

    WineXpert Bulk aging/racking question

I am assuming that the marbles will displace an equal amount of wine. I am going to a pet shop today to get some aquariam marbles to do this. I do have one more question regarding this. My SG onmy WE Crushendo Super Tuscanhas remained at 1.000 for 4 days straight. The directions say not to rack...

    WineXpert Bulk aging/racking question

I am bulk aging my WE Lodi II Cab and it has been in my cellar for about a month. My intention is to allow it to age in the carboy for at least 6 to 9 months befor bottling. How often, if ever, should I rack off of the lees while it is bulk aging? And if I do rack would you recommend that I top...

    WineXpert Reserving extra wine

I just racked my WE Super Tuscan Crushendo last night to begin secondary fermentation. I topped the carboy and had about a mason jar left over. Can I use this for further topping off? I stored it in my refrigerator last night figuring that it would slow down fermentation and keep the jar from...

    WineXpert Crushendo question

I started my WE Crushendo Super Tuscan last night. Instead of dumping the crushed grapes in the bucket I put them in a mesh bag. My question is: Is this Ok first off and second, do I need to stir daily as specified in the directions? Any other tips regarding this kit would be greatly...

WineXpert To sulphite or not to sulphite...

Can the K-meta be added at any time prior to bottling? I am racking my WE cab tonight and don't have any K-meta. It is my intention to bulk age at least 6 months before bottling so is it okay to wait a few weeks before adding?

    WineXpert Stuck fermentation?

When I racked my Pinot I topped off and it took 1 1/2 bottles. It seems like there are less lees with the cab. I'll wait until I rack the cab to determine, Thanks for the idea with the marbles, that seems like a good alternatitive.

    WineXpert Stuck fermentation?

Would you recommend racking to a 5 gal. carboy? It is currently in a 6 gal. What are your thoughts on topping off with a similar wine or trying to remain "pure" and racking to the 5 gal. carboy to allow the true characteristics of the kit cab. to come out.
