WineXpert My reds are very "tart/sour"

Peter, that is very interesting. Our city fathers also bottle our water and sell it at every event...and we have lots of them. This is an interesting area to live. The fur trading and lumbering industry was huge here so there are a lot of historical landmarks which bring 300,000 plus...

WineXpert My reds are very "tart/sour"

Oh my...you are all so nice, thank you! I enjoyed you also PWP. Maybe by the time Winestock rolls around I will be able to get away. Right now it doesn't seem possible but one never knows. I will try to send some bottles down for expert tasting. What I find odd is when I first starting...

WineXpert My reds are very "tart/sour"

Thank you everyone...I will just have to tuck them away and slap my hands when I want one. It was nice meeting you too Steve. Who knows, maybe life will calm down and I might be able to get away at the last minute for Winestock 2008. George throws a great party!. Btw...I used tap water...

WineXpert My reds are very "tart/sour"

Even the VR? The instructions say drinkable at 2 months. I usually make bigger kits but I thought I would try the VR to get a quick, drinkable red. Has anyone had experience with acidity? I am familiar with a strong tannin taste and that is not what this is. This is very tart...like biting...

WineXpert My reds are very "tart/sour"

I always use K-meta for sanitation and clean before I put the equipment away. I wish I was going to Winestock just to have someone else try it. I don't have a clue what I am doing differently. The VR merlot is supposed to be drinkable at 2 months. Does high acidity have a tart/sour taste?

WineXpert My reds are very "tart/sour"

I can't figure out what I am doing wrong. Seriously, I haven't made a good red in a very long time. Is it the acidity that I am tasting? Tonight I opened a VR merlot bottled May 1, 2007 and tossed it out. I then opened a selection merlot (again bottled in May) and it has the same tartness...

    Bananas and peppercorns

You will like the peppercorns...just don't be over zealous with them...a little goes a long way. I really like the added element in my Merlots and a little in the Shiraz/h. I have never used banana power. Are the chains of sugars the same in the power as the non processed bananas? I...

    Bananas and peppercorns

I am sorry James...I don't think it kicks up the % of alcohol but I've never measured it. Sounds like a good "project" for someone.

    Bananas and peppercorns

I did not like the raisins either but the bananas are really worth trying. Don't use it on whites...stick to battonage for whites. The bananas add body and a fuller mouth without adding flavor. I try to always add them. Also, adding a few peppercorns in the primary of a Merlot adds an...

    Bananas and peppercorns

Soooo, I have been encourged by one of our buddies to post this. With kits that are young and slight of liters, (VR and etc.) I add bananas to the primary. The bananas are old, black and mushy. It fools the palate and makes the young wines feel full in the mouth and more mature then they...

    Virginia Tech Tragedy

Yep...I've been reading your posts Peter...you are a very smart and savy guy. I am also a child of the 60"s and the life altering hits of JFK, Bobby, MLK and the daily dose of Vietnam...along with dinner, coctails and the nightly news...like it was OK, molded my life. I am appauled at the...

    Virginia Tech Tragedy

I am not a regular poster but I am lucky enough to know a lot of you so here I go... I work with "special people" on a minute to minute basis all over the country. The "news" stations glamorized and attempted to horrify us and sterotype a murderer. They set back decades of achievements for...
