    What R you doing today?

Habaneros and boiling vinegar really clears out the sinuses! I washed my hand well after handling them, but still, shaving later was still a "unique" sensation. It mixed weird with the menthol.

    What R you doing today?

Jam and pepper jelly I made a "mixed fruit" jam with wild plums, pear tomatoes, lemon zest, lemon juice, ginger and crab apple juice. I finally got around to pepper jelly (including bright orange Habaneros). Creations involving apples and green tomatoes are in my near future.

What are you making and what have you made ???

I'm finally gathering steam after almost 2 years of house selling and relocation chaos. I have 3 gallons of crab apple ready to rack, 2 gals crab apple just starting, 1 gal cran, 1gal cran grape, 1 gal chokecherry, planning 5 gal of 5 part cran, 3 part grape, 2 part apple cherry (house blend)...

What wierd stuff have you put in wine?

I like to add green or black tea to wine instead of tannin powder. It adds character, nutrients for the yeast and a little caffeine. Brown sugar or molasses is a nice variation too. A pinch of henbane seeds will make for a sleepy wine. Although too much henbane would dry your mouth horribly or...

How many batches did you have to make until you were "good" at it?

There will always be funny tasting batches because it's fun to play mad wine scientist. Flops can be good blending. I thought batch one (Welches balloon wine made with bread yeast) was pretty good when we passed around the in the abandon cheese factory in Winger MN (about 35 years ago). I should...

    Apple Wine Advice

My apple wine looked like it had it was half milk after sitting for a month or so after fermentation. Pectic enzyme worked Great. I have it in the laundry room and the clearing speeds up when it heats from doing laundry.

    Very Hard Cran

I take "Old Orchard" cranberry juice concentrate and slightly modify the instructions - instead of 3 to 1 - water to conc. juice, I replace the water with rum and have it on the rocks. Vodka or tequila would be interesting too. It's sort of a "Manly" Cosmopolitan. Haaa It's good in lemon aid...

    Haze from cooked apple juice

OK - I wasn't sure if the cooking would make a difference. I imagine cooking adds more pectin and I thought it might drop out with a clearing agent easier than being eaten by enymes. An interesting note: I think the wine is getting a little sweetness from the breakdown of the pectin (a...

    Haze from cooked apple juice

Hi - I have a TON of apples and I made gallons of juice for jelly and just drinking. I made a few gallons of wine from the cooked juice and I wondering what clearing agent would take out the pectin after wine is done. (It was just a quick side project when I had left over juice when canning...
