Starting this kit later today/tomorrow. Any recommendations on tweaking based on experiences of others with this kit? I may skip the Potassium Sorbate based on the other threads aimed at minimizing the risk of kit taste in dry red kits.

Starting the EPWS Sauvignon Blanc kit today. It came with 2 packages of QA23 yeast (2 x 5g). Should I use both packages or do you think it is a mistake on the part of the mfg?
I'm starting the bulk aging of my LE Barbara over the weekend/early next week. What type of oak cubes are you using? I'm contemplating splitting into 2 x 3gal carboys with different oak in each. Any thoughts or recommendations?

Thanks for the input. My next kit is the WE Eclipse Shiraz which I assume will have EC-1118 based on what I've seen in other WE Eclipse kits. Have you used a different yeast with this kit?
Also, any other tweaks that have been done with this kit that I should consider?
