i made it with juice concentrate ..
already sweetened (add more juice) + pottasium sorbate
already oaked
it still has the smell of strong alcohol (fusel alcohol - maybe?)
how to get rid of it :(
I started my wine from juice concentrate on 17-OCT
keep it in bucket for 4 days!
on 21-OCT i rack it to carboy and leave it there untill 5-NOV and rack it again to carboy..
on 5-DEC i rack and taste it and it has very very strong Ethanol smell and Flavor!!
is it problem or what? i can't...
I ended up with SG 0.994 after 3 weeks in secondary fermentation then I Racked it and added Potassium Sorbate + Campden tablet + Degassed it + more juice to sweeten + 15 grams of Hungarian Oak Cubes (MED TOAST) in one gallon jug.
now it's on the third racking since 6-NOV
So.. I have 2 options...

1- Primary fermentation (5days)
2- then i rack the wine without adding anything and i keep it for 3 weeks. (SG = 0.994)
3- after 3 weeks i added 3 campden tablets (3 gallon) , sorbate , oak cubes , degass , more juice to sweeten ..
now i will keep it for 1 month for clear...

i mean what is the ph level should be before fermenting?
if the juice is 3.5 (before fermenting) should i add?
if the juice is 4 (before fermenting) should i add?

i'm trying to make a good wine and i make 6 batches just for testing ... I used Welch's concord and another brand of grape juice.. all of them i used yeast nutrient .. 3 used bread yeast .. 3 with lalvin RC-212 .. but all of them have the bad smell i'm not sure if it Sulfur dioxide or hydrogen...
